Dear Mr. Easterling:
I am a senior in civil engineering at Clemson University. As a former Clemson student you know the classes and skills that are taught in the civil department. You are a professional in structural engineering so I am asking you help in preparing to make myself more useful to a potential employer. I am not asking for a job or a referral, I am just asking for help preparing myself for a job search. I need to find a way to make myself more appealing to a prospective employer therefore; I am requesting a meeting of approximately 15 minutes to tell you my skills and ask how they can best suit me in the structural emphasis.
I will be contacting you soon to set up an appointment. Thank you for your time. I will be looking forward to our conference.

Good start. You might want to switch the order of these two sentences (which may mean altering the rest of the paragraph a bit.)
